Al Brown to headline Feast Marlborough

Celebrity chef and best-selling cookbook author Al Brown will be the main attraction at at Feast Marlborough’s night market.

His headline billing at the event is part of a larger move to support local people, produce and talent through Feast Marlborough – all while having fun.

The Auckland-based chef will be attending Feast Marlborough for the first time and participating in festivities for three days and two nights.

Brown will be cooking up a range of signature seafood dishes at his stall using Marlborough-sourced New Zealand king salmon.

Tempting delights on offer will include salmon and apple sashimi served on a thin bed of oyster cream.

Brown said double-smoked salmon, warmed over a BBQ then garnished with beetroot relish and a mint and basil mayonnaise, will also be on the menu.

“We needed approachable meals we could pump out for Feast Marlborough attendees, so we couldn’t have anything that involved tweezering or sauce plating,” he said.

“We’re aiming to cook up around 300 portions of each dish, so that every attendee can have a taste.”

Brown said he “couldn’t wait to get down” to Feast Marlborough, which runs from May 10-13.

“I love that it allows you to chat to chefs and customers in an informal environment,” he said.

“It’s a great way to entertain. I’m all about it.”

Brown said while all of Marlborough was “a special place”, his most fond memories of the region were from Marlborough Sounds.

“I used to have amazing camping holidays there when I was a child,” he said.

“There were always great fishing spots to raid and plenty of bays, rocks and crannies to explore.

“The Marlborough coast in itself is amazing. I’ve done a spot of diving and cooking there in the past, and I also know it’s a great place to fish for blue cod and snapper.”
